In this video I show how easy it is to make your own Pastrami. The meat of choice is typically a brisket and trying to take it to another level I decided to use a Wagyu Brisket from my favorite place to source meat Broadleaf.
To make Brisket you need to use a Brine and cure the meat for 5-7 days. This gives the brisket that nice pink hue we are all used to.
Pastrami goes through a few cooking stages and that is what makes it different from corned beef. The main difference between the two is Pastrami is smoked while corned beef is not. For the smoking process I am using my Bradley Smoker as it gives me the easiest way to both cold smoke and hot smoke.
567g Kosher Salt
142g Sugar
99g Insta Cure #1
1.5 gallons of water
2 tsp Whole Allspice
2 tsp Coriander
1 tsp Cumin Seeds
3-4 Cloves of Garlic
1 tsp Chipotle Pepper
1 tsp Black Pepper
1 tsp Mustard Seeds
2 tsp Whole Cloves
2 Whole Bay Leaves
